Taylor Ham and Cheese Frittata

What says “Jersey-Style” more than Taylor ham (AKA Pork Roll) and cheese!? Your classic Sunday-morning bagel order gets a no-hassle makeover, turning it into an easy to serve, crowd-pleasing (not to mention, gluten free!) brunch dish.

Ingredients

  • 2 tablespoons olive oil
  • 1 6 ounce box thinly sliced Taylor ham/Taylor’s Pork Roll, chopped into 1’’ pieces
  • Salt and pepper, to taste
  • 1/4 cup milk
  • 12 large eggs
  • 1/4 pound unsliced yellow American cheese (from the deli counter), shredded
  • ½ cup sharp yellow cheddar cheese, shredded


Directions

Preheat oven to 400.

Over medium-high heat, add olive oil to an oven safe, 12’’, nonstick skillet. Once the oil is hot, add in Taylor ham and cook until ham is crispy and browned on all sides, about 5-6 minutes.

While ham is cooking, crack 12 eggs in the a large bowl, season with salt and pepper, and whisk until very well combined. Whisk in milk. Pour the egg mixture over the Taylor ham. Using a plastic spatula, pull the eggs away from the edges once or twice and let the eggs set on the stove for 1 minute. Top with shredded cheeses and bake 12-13 minutes or until the middle is set. Remove from the oven and loosen the edges with a spatula. Carefully slide the frittata onto a serving platter or board. Slice into 8 wedges and serve.
