Disco Home Fries

Traditionally I make home fries on the stove, but when I have a few mouths to feed, I love the technique of ‘oven-frying’ the potatoes; High oven temp, a little extra oil, and a lot less effort. To serve these “Jersey-Style”, I top them with homemade gravy and lots of mozzarella cheese for everyone’s favorite diner staple, Disco Fries!

Ingredients

  • 3 pounds Russet potatoes, about 5-6 medium potatoes, cut into rough 1” chunks
  • 1 medium onion, diced
  • ¼ cup olive oil
  • Salt and pepper, to taste
  • 1 tablespoon paprika
  • 1 tablespoon granulated garlic
  • 2 tablespoons unsalted butter
  • 1 small shallot, minced
  • 1 clove garlic, minced
  • Salt and pepper, to taste
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef or chicken stock
  • 1 tablespoon Worcestershire sauce
  • 1 ½-2 cups mozzarella cheese, shredded


Directions

Preheat oven to 425.

Place potatoes on a large baking sheet. Drizzle with olive oil and season with salt, pepper, paprika and granulated garlic. Using your hands, toss the potatoes with oil and seasonings until well coated. Roast in the oven for 12 minutes. Remove potatoes from oven and add the onions to the baking sheet. Using a spatula, toss the potatoes with the onions and roast in the oven for an additional 15-18 minutes, or until brown and crispy. Reserve.

In a high-sided skillet or medium saucepan, melt butter over medium heat. Add shallot and cook until translucent, about 4-5 minutes. Add garlic and cook for another 1-2 minutes. Season with salt and pepper then add remaining butter and melt. Sprinkle the flour in the pan and whisk until fragrant and light brown, about 1 minute. Whisk in stock and Worcestershire sauce, and continue whisking until there are no lumps. Let the gravy come to a bubble, whisking often, until it is thick enough to coat the back of a spoon, about 5-6 minutes.

Preheat broiler.

Carefully scoop and stack the roasted potatoes onto an oven safe platter or small baking sheet. Spoon hot gravy over the potatoes and top with mozzarella. Place under the broiler for 1-2 minutes or until cheese is melted and beginning to brown.
