Florentine Frittata


  Serves 6-8

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 pint cherry tomatoes
  • 1 small red onion, sliced
  • 2 9-ounce boxes frozen spinach, thawed and wrung out
  • Salt and pepper, to taste
  • 6 eggs
  • 6 egg whites (reserve yolks in the freezer for another baking project!)
  • 1 cup milk
  • 1 5-ounce container feta cheese crumbles
