Zoodle Stir-Fry

Ingredients

  • 3 tablespoons coconut or olive oil, divided
  • 1 pound boneless, skinless chicken breasts or thighs, very thinly sliced
  • 1 pound shitake mushrooms, brushed clean and thinly sliced
  • 1 bunch scallions, finely chopped
  • 1/2 cup shredded or grated carrot
  • 2 cloves garlic, finely chopped or grated
  • 1 red or yellow pepper, thinly sliced
  • 2 cups Napa cabbage
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 1 tablespoons ginger, peeled and chopped or grated
  • 3 cups zoodles (spiralized zucchini)
