No-Cook Peanut Zoodles

- 2 tablespoons soy sauce, tamari or liquid amino

- 1 tablespoon rice wine vinegar
- 2 tablespoons grated fresh ginger
- 1 tablespoon sriracha
- 1/4 – 1/2 cup hot water
- 4 medium zucchini, spiralized
- 1/2 head of red cabbage, thinly sliced or shredded
- 1 red or yellow bell pepper, thinly sliced
- 2 carrots, shredded
- 1 bunch scallions, sliced
- 1/2 cup salted roasted peanuts, chopped
- 1 small red chili, such as a fresno, thinly sliced (optional)
