Pumpkin Baked Ziti

Ingredients

  • 1 pound rigatoni, penne or ziti
  • Salt
  • 1 tablespoons olive oil
  • 1/2 pound sweet Italian sausage, loose or casings removed
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, grated or finely chopped
  • 2 1/2 tablespoons fresh sage leaves, finely chopped, divided
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups 2% or whole milk
  • 1 cup chicken stock
  • 2 cups grated Parmigiano Reggiano, divided
  • 2 1/2 cups grated mozzarella, divided
  • 10 to 12 grates fresh nutmeg
  • Pepper
  • 1 15-ounce can pumpkin purée
