BBQ Chicken Lettuce Wraps with Ranch Slaw
Here’s a way to have BBQ without ever even firing up the grill! This recipe uses a lot of help from the store for those nights that you really just need a break. Put out a big bowl of BBQ chicken, slaw, toppings and Bibb lettuce and let everyone make their own lettuce wraps.
- ¼ cup mayonnaise
- 2 tablespoons white wine vinegar
- Salt and pepper, to taste
- 1 teaspoon dried dill
- ½ teaspoon granulated garlic
- ½ teaspoon granulated onion
- 1 14-ounce bag coleslaw mix
- 2 cups pulled rotisserie chicken
- 1 cup favorite store bought BBQ sauce
- Bibb lettuce leaves
- Sliced avocado
In a large mixing bowl, whisk together mayonnaise, vinegar, salt, pepper, dill, granulated garlic, and granulated onion. Stir in coleslaw mix until coated. Cover, and put in the refrigerator for at least 30 minutes or overnight.
In a microwave-safe bowl, mix together chicken and BBQ sauce. Microwave on high for 2 minutes, stir, and microwave for an additional 1-2 minutes or until hot.
Serve BBQ chicken with lettuce wraps, ranch slaw, and sliced avocado
