Banana Rocky Road
At the end of the week, I’m always left with 1-2 overripe bananas that would make a lovely banana bread, but who wants to bake during these hot days of summer? Slice them up and freeze them in a plastic bag, pop them in the freezer, and treat yourself to a classic ice cream flavor, lightened up!
- 4 thinly sliced frozen bananas
- ¼ cup cocoa powder
- ½ cup mini marshmallows
- ⅓ cup toasted walnuts
- ¼ cup maple syrup
- 2-3 tablespoons water, as needed
Add all ingredients except water to a food processor and pulse until ingredients are mixed together. Slowly stream in some water until you see the food processor start to “churn” the nice cream. Continue pulsing until smooth and combined.
Serve immediately in bowls.
